(Green Bay, Wis.) – BelGioioso Cheese, leader in the Fresh Mozzarella category, is excited to introduce new innovative offerings and showcase their broad line of pizza cheeses at the 2024 Pizza Expo in Las Vegas March 19th – 21st.

BelGioioso offers several types of Fresh Mozzarella that can be used for pizza, including their NEW Baking Fresh Mozzarella and NEW Shredded Fresh Mozzarella.

New Baking Fresh Mozzarella is specially formulated for high heat with lower moisture allowing the cheese to melt evenly and quickly. New Shredded Fresh Mozzarella is an innovative option of Fresh Mozzarella, that is pre-shredded in 5 lb. bags, eliminating the need for extra labor in food preparation. The shreds ensure consistent portion sizes and coverage across pizzas leading to a more uniform distribution of cheese.

Other options include both water pack and thermoform packaged balls, logs, Ovolini, Bocconcini, Ciliegine and Pearl sizes. A Smoked Fresh Mozzarella is also available packaged in thermoform as a ball or log, and as a pre-shredded blend with Low Moisture Mozzarella in 5 lb. bags.

Demand for Margherita pizza has been consistent the past 5 years. According to Datassentials SNAP trends, it is predicted to grow 8% in the next 3 years. Fresh Mozzarella is the preferred cheese on a Margherita pizza.

While Fresh Mozzarella remains relevant and popular, we see continued interest in Burrata and Stracciatella Burrata Filling. Burrata is a fantastic addition to pizza, offering a creamy, indulgent texture that pairs well with various toppings. Burrata is often added after the pizza is cooked. Some operators prefer the Stracciatella for easier use as a pizza topping. Both are delicious and the best option truly depends on the aesthetic needs for the finished pizza.

BelGioioso offers several types of Burrata and Stracciatella that are perfect for pizzas and appetizers, including a
